Why does the base vat of the yogurt vat set have a larger capacity than the strainer?
Since the bottom base vat is noticeably deeper and larger than the strainer, you may wonder what purpose this design was intended for.
It is because the depth and capacity of the bottom vat were designed generously so that even as drained whey pools, it does not touch the yogurt again.
The upper strainer is 480ml, but the bottom base vat is 800ml, which is a much larger volume[1]. This set by SHIMOMURA consists of a strainer, a vat, and a lid[2]. The strainer can hold up to 450g of yogurt[3].
The difference comes from the amount of whey. Generally, when whey is strained from plain yogurt, a substantial portion of the original volume drains out as clear liquid. When the whey fills up, separation stops. If the strained whey touches the bottom of the strainer again, the yogurt will reabsorb moisture, so the bottom base is kept roomier and larger than the strainer to allow enough space for the drained liquid to pool.

The recommended time required for whey to separate completely when 450g of yogurt is placed in the strainer has not yet been confirmed.
